Storage Time

Unopened, canned artichokes can last for 12-18 months past the 'best by' date when stored in the pantry. Once opened, transfer the artichokes and their liquid to an airtight container and refrigerate for 3-5 days. For longer storage, they can be frozen for up to 6 months.

Temperature

Unopened cans should be stored in a cool, dry pantry, ideally between 10-21°C (50-70°F), away from direct sunlight and heat sources. After opening, always keep refrigerated at 0-4°C (32-40°F) to inhibit bacterial growth.

Freezing

Yes, canned artichokes can be frozen to extend their shelf life, though their texture may become slightly softer upon thawing. To freeze, drain the artichokes thoroughly and pat them dry to remove excess moisture. Portion them into freezer-safe bags or airtight containers, removing as much air as possible to prevent freezer burn. Label with the date. Thaw frozen artichokes overnight in the refrigerator or add them directly to cooked dishes like casseroles, dips, or stews, where a softer texture is less noticeable.

Signs of Spoilage

• Bulging or Leaking Can: An unopened can that is bulging, leaking, or has deep dents, especially along the seams, is a serious sign of potential botulism and should be discarded immediately without tasting.
• Off-Smell: After opening, if the artichokes emit a sour, yeasty, or otherwise unpleasant odor, they have likely spoiled and should not be consumed.
• Slimy Texture or Discoloration: If the artichokes appear slimy, mushy, or have developed unusual dark spots, mold, or a significantly altered color, these are clear indicators of spoilage.
• Cloudy Liquid: The liquid in the can or storage container should be relatively clear. If it appears cloudy, murky, or contains visible mold, discard the product.
