Fresh cheese ravioli, a delightful Italian pasta filled with creamy cheese, offers a quick and satisfying meal. Properly stored, these delicate parcels of flavor can be enjoyed for days, ensuring culinary success without compromising freshness.
Storage Time
3–4 days in the refrigerator, up to 1–2 months in the freezer for best quality.
Temperature
Keep refrigerated at or below 4°C (40°F).
Freezing
To freeze fresh cheese ravioli, ensure they are uncooked and well-chilled. Lay them in a single layer on a baking sheet lined with parchment paper and freeze until solid, about 1-2 hours. Once frozen, transfer the ravioli to an airtight freezer bag or container, removing as much air as possible to prevent freezer burn. This method helps prevent them from sticking together. To cook from frozen, simply drop them into boiling salted water and cook for a few minutes longer than fresh, usually 5-7 minutes, until they float and are tender. Avoid thawing before cooking for optimal texture.
Signs of Spoilage
- A sour or off odor emanating from the ravioli.
- A slimy or sticky texture on the pasta surface.
- Visible mold growth, which can appear as fuzzy spots of various colors.
