Freshly chopped green onions, also known as scallions, are a versatile ingredient that adds a bright, pungent flavor to countless dishes. Proper storage is key to preserving their vibrant color and crisp texture for optimal culinary use.
Storage Time
3–5 days in the refrigerator, up to 6 months when frozen.
Temperature
Store refrigerated at 0–4°C (32–40°F).
Freezing
Chopped green onions freeze exceptionally well, making them a convenient pantry staple. To freeze, wash and thoroughly dry the chopped onions, then spread them in a single layer on a baking sheet and freeze until solid. Once frozen, transfer them to an airtight freezer bag or container, removing as much air as possible to prevent freezer burn. Frozen green onions are best used directly from the freezer in cooked dishes, as their texture will soften upon thawing. They are ideal for adding to soups, stews, stir-fries, and casseroles.
Signs of Spoilage
- Slimy or mushy texture
- Unpleasant, sulfurous odor
- Yellowing or browning of the green parts
