Freezing
Coconut macaroons freeze exceptionally well. Ensure they are completely cooled before freezing. Place them in a single layer on a baking sheet lined with parchment paper and freeze until solid. Once frozen, transfer them to an airtight container or freezer bag, separating layers with parchment paper to prevent sticking. To thaw, simply remove from the freezer and let them come to room temperature for about 30-60 minutes. While they retain their flavor, the texture might become slightly softer after freezing.
