Storage Time
Store separated egg yolks in an airtight container in the refrigerator for 2–4 days. For longer preservation, they can be frozen for up to 12 months.
Temperature
Keep refrigerated at or below 4°C (40°F).
Freezing
To freeze egg yolks, gently whisk them with a pinch of salt or sugar (1/4 teaspoon per yolk) to prevent them from becoming gummy upon thawing. Store in airtight containers or freezer bags, labeling with the date and number of yolks. Thaw slowly in the refrigerator overnight before use. Frozen yolks may have a slightly altered texture, making them best suited for cooked dishes rather than raw applications.
Signs of Spoilage
- A distinct sulfurous or rotten egg smell.
- A slimy or watery texture that deviates from the usual viscous consistency.
- Discoloration, such as a greenish or grayish tint, instead of the vibrant yellow or orange hue.
