Freezing
French macarons freeze exceptionally well, making them perfect for making ahead. To freeze, place unfrozen macarons in a single layer on a baking sheet and freeze until solid. Then, transfer them to an airtight container or freezer bag, separating layers with parchment paper. Thaw slowly in the refrigerator overnight for optimal texture. Avoid freezing macarons with very delicate or fresh fruit fillings, as these may alter in texture upon thawing.
Signs of Spoilage
