Storage Time
Fresh arugula typically lasts 3–5 days in the refrigerator. If blanched and properly frozen, it can maintain quality for up to 6–8 months.
Temperature
For optimal freshness, store fresh arugula in the refrigerator at a cool temperature, ideally between 0–4°C (32–40°F).
Freezing
While fresh arugula is best enjoyed crisp, it can be frozen for longer storage, though its texture will soften upon thawing, making it more suitable for cooked applications like soups, sauces, or sautés. To freeze, first blanch the arugula by submerging it in boiling water for 30 seconds, then immediately transfer it to an ice bath to stop the cooking process. Drain thoroughly, squeeze out excess water, and pat dry. Pack the blanched arugula into airtight freezer bags or containers, removing as much air as possible, and freeze flat. Thaw frozen arugula in the refrigerator overnight or add directly to hot dishes.
Signs of Spoilage
- The vibrant green leaves begin to turn yellow, brown, or develop dark, watery spots, indicating decay and loss of freshness.
- Arugula develops a slimy or mushy texture, losing its characteristic crispness and becoming limp and unappetizing.
- A noticeable sour, pungent, or unpleasant odor replaces its fresh, peppery aroma, signaling bacterial growth and spoilage.
- Excessive wilting that doesn't revive with a quick soak in ice water, indicating the greens have lost too much moisture and are past their prime.
