Storage Time
Bitter melon is best enjoyed fresh and will typically last for 3–5 days when stored correctly in the refrigerator. For longer preservation, freezing is an option, though it may slightly alter the texture.

Store fresh bitter melon in the crisper drawer of your refrigerator, ideally between 0–4°C (32–40°F), to slow down ripening and prevent spoilage.
Freezing
To freeze bitter melon, wash it thoroughly, remove seeds and pith, and slice it into desired pieces. Blanching the slices in boiling water for 1-2 minutes, followed by an ice bath, helps preserve color and texture. Drain well, pat dry, and spread in a single layer on a baking sheet to freeze before transferring to airtight freezer bags or containers. Frozen bitter melon is best used within 6–8 months for optimal quality and can be added directly to cooked dishes without thawing.
