Freezing
To freeze fresh carrots, wash, peel, and chop or slice them. Blanching is essential for preserving quality: boil for 2-3 minutes, then immediately plunge into ice water to stop the cooking process. Drain thoroughly and spread on a baking sheet to freeze individually before transferring to airtight freezer bags or containers. Frozen carrots are best used within 8-12 months for optimal flavor and texture. Thaw by adding directly to cooked dishes or by briefly warming.
