Freezing
To freeze daikon radish, wash, peel, and chop it into desired pieces. Blanching is recommended to preserve texture and color: boil for 1-2 minutes, then immediately plunge into ice water. Drain thoroughly and spread on a baking sheet to freeze individually before transferring to airtight freezer bags or containers. Thaw frozen daikon in the refrigerator overnight or use directly in cooked dishes, as its texture may become softer after freezing.
