Freezing
To freeze fresh green beans and preserve their quality, blanching is essential. First, wash and trim the beans. Boil them in water for 3 minutes, then immediately plunge them into an ice bath for another 3 minutes to stop the cooking process. Drain thoroughly and pat dry. Pack the blanched beans into airtight freezer bags or containers, removing as much air as possible to prevent freezer burn. Label with the date. When ready to use, green beans can often be cooked directly from frozen; for recipes requiring thawed beans, a quick rinse under cold water or a brief soak can suffice, though some texture loss may occur.
