Freezing
To freeze fresh horseradish root, thoroughly wash and peel it. Grate or chop the root into desired sizes and spread them in a single layer on a baking sheet to freeze solid. Once frozen, transfer the grated or chopped horseradish to airtight freezer bags or containers. This method preserves its intense flavor for up to 6 months. Thaw frozen horseradish in the refrigerator overnight before use. Note that the texture may become softer after freezing, but the pungent flavor remains potent.
Signs of Spoilage
- Shriveling or significant softening of the root.
- Development of mold, often appearing as fuzzy white or green spots.
