Storage Time
Grilled eggplant slices will stay fresh for 3–4 days when properly stored in the refrigerator, and can be safely frozen for up to 3–4 months for longer preservation.
Temperature
Keep refrigerated at a consistent temperature between 0–4°C (32–40°F) to inhibit bacterial growth and maintain optimal freshness and food safety.
Freezing
To freeze grilled eggplant slices, first ensure they are completely cooled to room temperature to prevent condensation and ice crystals. Arrange them in a single layer on a baking sheet and flash freeze for about an hour until firm. Transfer the frozen slices to an airtight freezer-safe container or heavy-duty freezer bag, removing as much air as possible to prevent freezer burn and maintain quality. Label with the date. Thaw overnight in the refrigerator or reheat directly from frozen in an oven or microwave, though the texture may become slightly softer upon thawing.
