Grilled mushrooms are a wonderfully savory and versatile side dish, but proper storage is crucial to maintain their earthy flavor and tender texture. To ensure food safety and extend their deliciousness, always store these cooked fungi promptly and correctly after preparation.
Storage Time
3–5 days in the refrigerator, up to 2–3 months in the freezer
Temperature
Keep refrigerated at 0–4°C (32–40°F) in an airtight container.
Freezing
To successfully freeze grilled mushrooms, first allow them to cool completely to room temperature. For best results and to prevent clumping, spread the cooled mushrooms in a single layer on a baking sheet and flash freeze for 1-2 hours until solid. Once frozen, transfer them to an airtight, freezer-safe bag or container, pressing out as much air as possible to minimize freezer burn. Label with the date. When ready to use, you can thaw them overnight in the refrigerator or add them directly to hot dishes from frozen. Be aware that their texture may become slightly softer upon thawing, but their flavor will remain intact.
Signs of Spoilage
- A slimy or sticky film developing on the surface of the mushrooms, indicating bacterial growth.
- A sour, ammonia-like, or otherwise off-putting smell that is distinctly different from their fresh, earthy aroma.
- Visible mold growth, which can appear as fuzzy white, green, or black spots, or a significant darkening in color beyond their original grilled hue.
