Storage Time
3–4 days in the refrigerator, up to 6–12 months in the freezer.
Temperature
Keep refrigerated at 0–4°C (32–40°F). For freezing, maintain a temperature of -18°C (0°F) or below.
Freezing
Kangaroo steak freezes exceptionally well. For best results, wrap individual steaks tightly in plastic wrap, then in aluminum foil or place in a freezer-safe bag, removing as much air as possible to prevent freezer burn. Thaw steaks slowly in the refrigerator overnight for optimal texture and safety. Avoid thawing at room temperature. Once thawed, cook within 1–2 days.
Signs of Spoilage
- A strong, sour, or ammonia-like odor.
- A slimy or sticky texture on the surface of the meat.
- Discoloration, such as a dull grey or greenish hue, instead of its natural deep red.
