Storage Time
Raw pork burgers can be safely stored in the refrigerator for 1 to 2 days. Once cooked, they will last for 3 to 4 days in the fridge. For longer preservation, raw pork burgers can be frozen for 3 to 4 months, while cooked burgers are best consumed within 2 to 3 months when frozen.
Temperature
Always keep raw and cooked pork burgers refrigerated at a consistent temperature of 0–4°C (32–40°F) to inhibit bacterial growth. When freezing, maintain a temperature of -18°C (0°F) or colder.
Freezing
To freeze raw pork burgers, wrap each patty individually in plastic wrap, then place them in an airtight freezer bag or container, removing as much air as possible to prevent freezer burn. For cooked pork burgers, allow them to cool completely before wrapping and freezing. Thaw frozen pork burgers slowly in the refrigerator overnight for best results and to maintain texture. Avoid thawing at room temperature, which can encourage bacterial growth. Once thawed, cook raw burgers immediately or reheat cooked burgers thoroughly to an internal temperature of 71°C (160°F).
Signs of Spoilage
- Off-putting Odor: A sour, pungent, or ammonia-like smell is a strong indicator that the pork burger has spoiled and should be discarded. Fresh pork should have a very mild, almost neutral scent.
- Discoloration: Raw pork burgers should be a light pinkish-red color. If they turn grey, brown, or develop green or black spots, they are no longer safe to eat.
- Slimy or Sticky Texture: Fresh pork burgers should feel firm and slightly moist. If the surface feels slimy, sticky, or unusually tacky to the touch, it's a clear sign of bacterial growth and spoilage.
