Freezing
Roasted tomatoes freeze exceptionally well, retaining much of their flavor and texture. Allow them to cool completely, then portion them into airtight containers or freezer bags, removing as much air as possible. For best quality, consume within 2–3 months. To thaw, transfer to the refrigerator overnight or gently reheat from frozen in a saucepan or oven.
