Storage Time
Sprouted mung beans are best enjoyed fresh within 3 to 5 days when properly refrigerated. While freezing is possible, it's generally recommended for cooked sprouts, extending their shelf life for up to 1 to 2 months, though raw sprouts may lose some crispness.

Freezing
While raw sprouted mung beans can be frozen, their delicate, crisp texture may become somewhat soft or mushy upon thawing, making them better suited for cooked applications like soups or stir-fries after freezing. For best results, consider blanching the sprouts briefly (1-2 minutes) in boiling water, then shocking them in ice water before draining thoroughly and patting dry. Spread them in a single layer on a baking sheet to freeze individually, then transfer to an airtight freezer-safe bag or container, removing as much air as possible. Thaw frozen sprouts overnight in the refrigerator or add them directly to hot dishes without prior thawing.
Signs of Spoilage
- A slimy or sticky film developing on the sprouts, indicating bacterial growth and a loss of freshness.
- An unpleasant, sour, or strong musty odor emanating from the container, a clear sign they are no longer safe to consume.
- Any visible mold, typically fuzzy white, green, or black spots, which means they must be discarded immediately.
- Significant darkening or browning of the sprouts, losing their vibrant white and yellow-green appearance, suggesting deterioration.
