Due to its fresh ingredients, including seafood and a dairy-based sauce, proper storage is absolutely crucial to maintain its quality, prevent bacterial growth, and ensure food safety.
Storage Time
This fresh sushi item should be consumed as quickly as possible, ideally within a few hours of preparation. It lasts a maximum of 1 day in the refrigerator. Freezing is not recommended for optimal quality.
Temperature
Keep refrigerated at a consistent temperature between 0–4°C (32–40°F) immediately after purchase or preparation. This cold environment is essential to inhibit bacterial growth and preserve the freshness of the seafood and rice components.
Signs of Spoilage
- A strong, sour, or distinctly fishy odor emanating from the temaki, indicating bacterial growth and spoilage of the seafood and rice components.
- A slimy, mushy, or overly soft texture on the rice or crab mayo filling, which should normally be firm and distinct. The nori may also become excessively limp and sticky.
- Any visible discoloration, such as the crab meat turning grayish or developing unusual spots, or the rice showing pink, green, or black patches of mold.
