Temperature
Keep refrigerated at 0–4°C (32–40°F). For longer storage, freeze at -18°C (0°F).
Freezing
Wild boar sausages freeze exceptionally well, preserving their delicious flavor and texture. For best results, wrap them tightly in plastic wrap, then in aluminum foil or place them in a freezer-safe bag, removing as much air as possible. To thaw, place the frozen sausages in the refrigerator overnight. Never thaw at room temperature. Cook thoroughly after thawing.
Signs of Spoilage
- A sour or ammonia-like smell.
- A slimy or sticky texture on the sausage casing.
- Discoloration, such as a grayish or greenish hue, especially if accompanied by mold growth.
