Black rice, also known as forbidden rice, is a nutrient-dense whole grain with a slightly nutty flavor and chewy texture. Its deep purple hue comes from anthocyanins, powerful antioxidants that offer significant health benefits. This versatile grain is perfect for a variety of culinary applications, from side dishes to salads and even desserts.
Storage Time
Up to 2 years in a cool, dry pantry; cooked black rice lasts 3–4 days in the refrigerator.
Temperature
Store uncooked black rice in a cool, dry place, ideally between 15-20°C (59-68°F). Cooked rice should be refrigerated at 0-4°C (32-40°F).
Freezing
Uncooked black rice can be frozen to extend its shelf life indefinitely, though quality may slightly diminish over very long periods. For cooked black rice, allow it to cool completely before portioning into airtight containers or freezer bags. Frozen cooked rice is best used within 2-3 months for optimal texture and flavor. Thaw overnight in the refrigerator or gently reheat from frozen in a saucepan with a splash of water.
Signs of Spoilage
- A musty or rancid odor emanating from the uncooked grains.
- Visible mold growth or discoloration on the uncooked rice.
- A slimy or clumpy texture in cooked black rice, indicating bacterial growth.
