Storage Time
Kulfi is best enjoyed fresh, but can be stored in the refrigerator for 1-2 days. For longer preservation, freezing is highly recommended, where it can maintain optimal quality for up to 2-3 months.
Temperature
Store refrigerated kulfi between 0-4°C (32-40°F). Frozen kulfi should be kept at -18°C (0°F) or below.
Freezing
To freeze kulfi, ensure it is completely cooled if freshly made. Portion it into airtight containers or wrap individual kulfi molds tightly in plastic wrap followed by aluminum foil to prevent freezer burn and maintain its delightful texture. Thaw slowly in the refrigerator for several hours before serving to achieve the best consistency; avoid thawing at room temperature as this can affect its texture and introduce safety concerns.
Signs of Spoilage
- Visible ice crystals forming on the surface, indicating potential freezer burn or repeated thawing and refreezing.
- An off, sour, or fermented smell, suggesting bacterial growth.
