Indulge in the rich, decadent flavor of dark chocolate truffles, a luxurious treat perfect for any occasion. Properly stored, these exquisite confections can maintain their delightful texture and intense cocoa notes for extended periods.
Storage Time
Up to 2 weeks in a cool pantry, 3-4 weeks in the refrigerator.
Temperature
Ideal pantry storage is between 15-20°C (60-68°F). Refrigeration at 0-4°C (32-40°F) is also suitable.
Freezing
Dark chocolate truffles can be frozen to extend their shelf life significantly. Wrap them tightly in plastic wrap, then place them in an airtight container or freezer bag to prevent freezer burn and absorption of odors. To thaw, transfer the frozen truffles to the refrigerator for several hours or overnight. Avoid thawing at room temperature, as this can cause condensation and affect the texture, potentially leading to a 'bloom' on the surface.
Signs of Spoilage
- White, powdery coating (sugar bloom or fat bloom) on the surface, indicating changes in temperature or age.
- Off-putting, stale, or rancid smell, a clear sign the fats have oxidized.
- Unpleasant, waxy, or chalky texture, deviating from the smooth, melt-in-your-mouth quality.
