Freezing
Fontina cheese can be frozen, but its texture may become crumbly upon thawing, making it best suited for cooking applications like sauces, gratins, or baked dishes rather than eating as is. Wrap the cheese tightly in plastic wrap, then in aluminum foil or a freezer-safe bag to prevent freezer burn. Thaw slowly in the refrigerator for best results.
