Fresh frisée lettuce typically lasts 3–5 days in the refrigerator when stored correctly. Freezing is possible for cooked applications, extending its usability for up to 6 months, though it's not recommended for maintaining its crisp salad quality.

For optimal freshness, store frisée lettuce in the coldest part of your refrigerator, ideally at temperatures between 0–4°C (32–40°F).
Freezing
While freezing fresh frisée lettuce is not ideal for preserving its crisp texture for salads, it can be frozen for use in cooked dishes like soups, stews, or smoothies. To freeze, first wash and thoroughly dry the leaves using a salad spinner or paper towels, as excess moisture leads to freezer burn. Blanching is not necessary for leafy greens intended for smoothies, but for cooked dishes, a quick 30-second blanch followed by an ice bath can help retain color and nutrients. Pack the dried leaves tightly into freezer-safe bags, removing as much air as possible to prevent ice crystal formation, or into airtight containers. When ready to use, add frozen frisée directly to hot dishes; for other uses, thaw in the refrigerator, but expect a very soft, wilted texture unsuitable for fresh consumption.
Signs of Spoilage
- The leaves become noticeably limp, wilted, and lose their characteristic crispness, indicating a loss of moisture and freshness.
- Development of yellowing, browning, or dark, slimy spots on the leaves, which are clear indicators of decay and bacterial growth.
- An unpleasant, sour, or pungent odor emanating from the lettuce, a strong sign that it has spoiled and should be discarded immediately.
