Storage Time
Fresh mung bean sprouts typically last 2–3 days in the refrigerator. Freezing is possible after blanching, extending their shelf life for up to 6 months, though their texture will soften.
Temperature
Keep fresh mung bean sprouts consistently refrigerated at a cool temperature, ideally between 0–4°C (32–40°F), to slow down spoilage and maintain their crispness.
Freezing
While freezing fresh mung bean sprouts is possible, it will alter their signature crisp texture, making them softer upon thawing. To freeze, first blanch the sprouts in boiling water for 1-2 minutes, then immediately plunge them into an ice bath to stop the cooking process. Drain them thoroughly, pat dry, and pack them into airtight freezer bags or containers, removing as much air as possible. They can be stored for up to 6 months. Thaw frozen sprouts in the refrigerator overnight or add them directly to cooked dishes; they are best used in stir-fries, soups, or stews rather than raw applications.
