Freezing
Yes, fresh oca roots can be successfully frozen to extend their shelf life significantly. To prepare them for freezing, first wash and gently scrub the oca roots, then peel them if desired. Blanch the whole or sliced oca in boiling water for 2-3 minutes to help preserve their texture and color. Immediately transfer them to an ice bath to halt the cooking process, then drain thoroughly and pat completely dry. Flash freeze the blanched oca on a baking sheet until solid, then transfer to airtight freezer bags or containers, removing as much air as possible to prevent freezer burn. Label with the date. When ready to use, thaw frozen oca in the refrigerator overnight or cook directly from frozen, though the texture may be slightly softer after thawing.
