Freezing
To freeze fresh salsify roots, first wash and peel them, then blanch them in boiling water for 2-3 minutes. Immediately plunge them into ice water to stop the cooking process. Drain thoroughly, pat dry, and pack them into airtight freezer bags or containers, removing as much air as possible. Frozen salsify is best used within 6-8 months for optimal quality. Thaw overnight in the refrigerator before cooking.
