Storage Time
Frisée salad can be kept wonderfully fresh in the refrigerator for 3–5 days when stored correctly. It is highly perishable and not suitable for pantry storage, nor is it recommended for freezing if its crisp texture for salad use is desired.
Temperature
Always store frisée salad in the coldest part of your refrigerator, ideally maintaining a consistent temperature between 0–4°C (32–40°F), to significantly slow down spoilage and preserve its signature crispness.
Signs of Spoilage
- Wilting and Limpness: The once crisp and vibrant leaves will become soft, droopy, and lose all structural integrity, indicating a significant loss of moisture and freshness.
- Slimy Texture: The development of a sticky, slick, or slimy film on the surface of the leaves is a definitive sign of bacterial growth and advanced spoilage, rendering the frisée unsafe to consume.
- Discoloration: Fresh frisée boasts vibrant green outer leaves and pale yellow-white inner leaves. Any significant yellowing, browning, or the appearance of dark, watery spots on the leaves suggests deterioration and spoilage.
- Off-Odor: A sour, unpleasant, or distinctly rotten smell emanating from the frisée is a clear and unmistakable indicator that it has spoiled and must be discarded immediately to prevent foodborne illness.
