Storage Time
Up to 3 weeks when properly wrapped in the refrigerator.
Temperature
Store Gruyère cheese in the coldest part of your refrigerator, ideally between 2–7°C (35–45°F).
Freezing
While Gruyère cheese can be frozen, its texture may become crumbly and drier upon thawing, making it best suited for cooked dishes rather than eating plain. Wrap the cheese tightly in plastic wrap, then in aluminum foil or a freezer-safe bag to prevent freezer burn. Thaw slowly in the refrigerator for 24–48 hours before use. For best results, use frozen Gruyère in recipes like gratins, sauces, or casseroles.
Signs of Spoilage
- Visible mold growth (other than the natural rind, look for fuzzy or colored patches on the interior).
- A sour, ammoniated, or otherwise off-putting smell.
- A slimy or sticky texture on the surface.
