Storage Time
Fresh mozzarella in brine: 1-2 weeks after opening; Vacuum-sealed fresh mozzarella: 2-3 weeks unopened. Shredded or sliced mozzarella: 1-2 weeks.
Temperature
Keep refrigerated at 0–4°C (32–40°F).
Freezing
While freezing can alter the texture of fresh mozzarella, making it crumbly or watery upon thawing, it's a viable option for cooked dishes like casseroles or pizzas where texture changes are less noticeable. For best results, drain excess liquid from fresh mozzarella, wrap it tightly in plastic wrap, then in foil or a freezer bag. Thaw slowly in the refrigerator overnight before using.
Signs of Spoilage
- A sour or ammonia-like smell.
- A slimy or sticky texture on the surface.
- Visible mold growth, which can appear as green, blue, or fuzzy spots.
