Storage Time
Fresh pasta: 1-2 days in the refrigerator. Dried pasta: Up to 1 year in a cool, dry pantry. Frozen pasta: Up to 2-3 months in the freezer.
Temperature
Refrigerate fresh pasta at 0–4°C (32–40°F). Store dried pasta in a cool, dark pantry at room temperature (15–25°C or 59–77°F). Freeze pasta at -18°C (0°F) or below.
Freezing
To freeze fresh pasta, ensure it is completely dry. You can freeze it in nests or as individual strands, lightly dusted with flour to prevent sticking. Place the pasta in an airtight container or a heavy-duty freezer bag, removing as much air as possible. Frozen pasta can be cooked directly from frozen; simply add it to boiling water and cook for a few extra minutes. Thawing is not recommended as it can lead to a mushy texture.
Signs of Spoilage
- A sour or off smell, particularly noticeable with fresh pasta.
- Visible mold growth, appearing as fuzzy spots of various colors.
