Delicate choux pastry shells, often filled with luscious cream and drizzled with rich chocolate sauce, profiteroles are a delightful French pastry. Proper storage is key to maintaining their crisp texture and fresh filling.
Storage Time
Best enjoyed within 1-2 days when refrigerated. Unfilled shells can be stored longer.
Temperature
Store filled profiteroles refrigerated at 0–4°C (32–40°F). Unfilled shells can be stored at room temperature in an airtight container.
Freezing
Profiteroles freeze best when unfilled. Wrap individual choux shells tightly in plastic wrap, then place in a freezer-safe bag or container. To thaw, let them come to room temperature for about 30 minutes before filling. Filled profiteroles are not ideal for freezing as the cream can become watery and the pastry soggy upon thawing.
Signs of Spoilage
- Soggy or mushy pastry texture, indicating moisture absorption.
- Sour or off smell from the cream filling.
- Visible mold growth on the pastry or filling.
