Storage Time
Unopened ricotta can last for 1-2 weeks past the 'sell-by' date in the refrigerator. Once opened, consume within 5-7 days for optimal freshness and safety.

Always store ricotta cheese in the refrigerator, ideally between 0°C and 4°C (32°F and 40°F).
Freezing
While ricotta cheese can be frozen, its creamy texture may change upon thawing, becoming more watery or grainy. To freeze, drain any excess liquid, place it in an airtight container or heavy-duty freezer bag, and freeze for up to 2-3 months. Thaw slowly in the refrigerator overnight. It's best used in cooked dishes after freezing, as the texture change is less noticeable.
Signs of Spoilage
- A sour or off smell, distinct from its usual mild aroma.
- Visible mold growth, which can appear as fuzzy patches of various colors (green, blue, pink, or black).
- A slimy or sticky texture, or a significant change in its usual smooth, slightly grainy consistency.
