Temperature
Refrigerate fresh tortellini at or below 4°C (40°F). For optimal freezing, maintain a freezer temperature of -18°C (0°F) or lower.
Freezing
To freeze fresh tortellini, ensure they are uncooked and not touching. Spread them in a single layer on a baking sheet and freeze until solid, then transfer to an airtight freezer bag or container. This prevents clumping. Thaw frozen tortellini overnight in the refrigerator or cook directly from frozen, adding a few extra minutes to the cooking time. Avoid refreezing thawed tortellini.
