Preserved through dehydration, sun-dried tomatoes offer an intense, concentrated flavor that elevates countless culinary creations. Whether packed in oil or dry, proper storage is key to maintaining their delightful chewiness and vibrant taste.
Storage Time
Unopened dry: 12-18 months in pantry. Opened dry: 1-2 months in pantry. Packed in oil: 2-3 weeks in fridge after opening. Rehydrated: 3-5 days in fridge.
Temperature
Store dry sun-dried tomatoes in a cool, dark pantry (ideally 15-20°C). Sun-dried tomatoes packed in oil should be refrigerated at 0-4°C after opening.
Freezing
Yes, you can freeze sun-dried tomatoes to extend their shelf life significantly. For dry-packed varieties, simply place them in an airtight freezer bag or container. If they are packed in oil, drain off excess oil and then freeze in a similar manner. To thaw, remove from the freezer and let them come to room temperature, or add them directly to cooking. Freezing may slightly alter their texture, making them a bit softer, but the flavor remains excellent for cooking applications.
Signs of Spoilage
- Visible mold growth on the surface.
- An off, rancid, or fermented smell.
- A slimy or sticky texture, especially in dry-packed varieties.
